Our first Easter inspiration for the season is one of the easiest preparations we will show you in 2025 – The easter macarons! Our Summer Fruit Macarons are perfect for this recipe with the flavours of summer, coconut, Mandarin, Blueberry, Raspberry & Lemon. These are the perfect substitute for your chocolate cravings!

The Recipe!

While the real stars of this recipe are the macarons—we recommend using Emma-Jane’s Foodservice Poppies Summer Fruit Macarons—the royal icing is just as essential!

Our favourite way to make royal icing is by whipping egg whites until just fluffy, then gradually adding icing sugar to achieve the perfect thickness. This method is foolproof and skips the meringue powder often used in American recipes.

Important note: To ensure your royal icing is safe to eat without meringue powder, make sure you’re using pasteurised egg whites. This greatly reduces the risk of salmonella and makes your icing food-safe.

Once your mixture reaches stiff peaks (just like a meringue), it should hold its shape when you lift the whisk. At this stage, divide the icing into separate bowls to add your colours.

We recommend using gel food colouring for vibrant results without changing the consistency—available now at Woolworths in New Zealand! If you’re using liquid food colouring instead, the added moisture may thin your icing. If that happens, simply add a little more icing sugar until the desired consistency is restored.

The Decorating

Once you’ve created your royal icing and coloured it, its now time for the decorating! We’ve used extremely simple designs only using a Ziplock bag to pipe, our biggest tip is to cut the hole of the Ziplock bag smaller than you would usually anticipate, this makes sure that your piping is more precise to get your desired look! Think Measure twice cut once because spooning the mixture out of the bag is an unnecessary pain we do not need!

Recipe

Ingredients
  • Macarons (Emma-Jane’s Foodservice Summer Fruit Macarons or Genuine French Macarons)
For Royal icing
  • 2 eggs (Use of egg whites only)
  • 1 cup of Icing sugar
  • 1/2 tsp of Vanilla essence or extract
  • Gel food colouring
Instructions
  1. Separate egg whites and egg yolks into two small bowls and let the egg whites sit out of the fridge for an hour.
  2. Put egg whites into a large bowl and whisk until whites become a fluffy and bubbly texture
  3. Start sifting icing sugar into bowl whilst whisking the egg whites slowly.
  4. Once combined, whisk on high speed until white glossy peaks form. They should maintain their shape and not flop when held up out of the bowl.
  5. Spilt mixture into different bowls, add the gel colours and mix until desired colour is formed.
  6. Spoon mixtures into piping bag or zip lock bag and pipe on your desired pattern to the macaron.
  7. Let the macarons dry for an hour before consuming to get desired consistency!
